Mmm...pumpkin bread

'Tis the season...

The season for pumpkin bread, that is.

A few years ago, my neighbor brought me over a loaf of this homemade pumpkin bread, and after eating the entire loaf in one evening, I begged her for the recipe.

I won't make my bloggy friends beg, 'cause that's the kind of girl I am. Sorry I can't bake enough loaves for y'all to sample...hopefully the pictures will suffice. I promise that this is the best pumpkin bread I have ever tasted...I think you'll agree.

First step: print off the recipe.

Second step: gather ingredients. This bread is even more delicious when served with pumpkin coffee from Get the Bean (courtesy of my friend, Catherine).

Third step: mix the ingredients in the Kitchen Aid mixer you just had to have, but only use for two months out of the year.

Fourth step: fold batter into whatever pan you have clean and sprayed with non-stick spray. I doubled the recipe this time, so it made enough for four mini-loaves and twenty-four mini-muffins (pans from Pampered Chef). Place in preheated oven and bake until they look done.

Fifth step: try to let them cool long enough so you don't burn the roof of your mouth when you take the first bite (I hate when that happens!). If you are a gracious neighbor, share. If not, well then, I'm glad you're not MY neighbor.

Paula's (not Paula Deen, just neighbor Paula) Pumpkin Bread recipe:


Ingredients (for a 9x5x3 loaf pan...double for the amount shown)

4 oz softened cream cheese
1/4 cup softened butter
1 1/4 cup sugar
2 eggs
1 cup canned pumpkin
1 3/4 cup all purpose flour
1 tsp baking soda
1/4 tsp baking powder
1/2 tsp salt
1/2 tsp ground cinnamon
1/2 cup chopped walnuts
(a handful of mini chocolate chips, optional)


Directions:
1. Preheat oven to 350 degrees. Grease your pan(s).
2. Mix cream cheese, butter and sugar together in large mixing bowl. Beat eggs in one at a time until blended. Mix in pumpkin.
3. In another bowl, combine the rest of the dry ingredients. Slowly stir into pumpkin mixture until well-blended. Fold batter into greased pan(s).
4. Bake at 350 degrees for 60-70 minutes for loaf pan, less for muffins. Cool in pan for 10 minutes, then place on cooling rack.
5. Enjoy!

Summer lovin'

Yep, I know y'all are just green with envy right about now. Not only do I get to have a fabulous birthday with my best friend and my sisters and family for a whole week; not only do I get to go on a road trip to Lulaville for a weekend; now I get to spend a whole afternoon with this delightful diva. Sorry, folks...I don't mean to make you jealous, really I don't.


I know Becky doesn't believe me when I tell her that I love when I get to babysit Summer. I know she thinks it's me doing her this big favor. And I guess I'll just let her go on believing it. But the truth is this: I love me some Summer-time. This baby is A-Door-Uh-Bowl! She is such a girly-girl, and for some strange reason, she loves to kiss and hug on me all the time, which I just eat right up. Especially since Gabe is such a stingy bugger about giving his mommy some lovin'.

So, Becky, I guess I can sacrifice a couple of hours of my precious time and take care of your baby girl. It's a hardship, but that's what friends are for...


(Summer, you cannot tell your mom how much fun we had today. You cannot tell her how many donuts I let you eat, or how I held you the whole time, or how I generally spoiled you rotten while you were here. It's our little secret, 'kay?)

Road Trip, Part Two.

A few of you knew where Michelle and I were going this weekend. (You're so good at keeping secrets; I'm impressed!)

I'll have you know that I was the one with the map, and we still made it to our destination (with a wee little bit of help from our hosts).

FYI, the mountains of Virginia prevent many cell phones from getting a signal. Definitely a hazard when you are driving in the drizzly, foggy, dark of night without any idea of the exact address of said hosts.

The following post is proof that the people you meet in blogland can be exactly what you imagined, when you meet them in real life...



Yep, that's right, we went to Lulaville! Several months ago, Lula and I were talking about how close we live to each other (less than 5 hours away), and how awesome it would be to get together and discuss all things Twilight, eat pumpkin crisp, and generally just have a good time. We looked at our calendars, set a travel date, then counted down the days until November 7th. My big sis, Michelle, is such a good sport; when I called her and shouted "we're going to Lulaville!", she simply asked "when?" and stated "I'm driving this time", and that was that. This past Friday, we loaded up into her car and made the trek to...


Rite-Aid. Yep, we were a tad bit lost (on the right track, just didn't have all the little rural road names leading to Lula's house). So we pulled over at a local church and called Lula; her sweet hubby tried to talk us the rest of the way, but my phone kept cutting out, so he told us to get to the Rite-Aid and just wait there for our "knight-ess in shining armor"...Lula.
Once we arrived, we giggled and laughed and screamed like school girls, staying up 'til 2am before we crashed in the guest room. Lula's so darn sweet; she even bought us new pillows to sleep on (we won't discuss what happened to the old ones, okay?).


The next morning, Michelle and I were so excited to meet Lula's little girls. We had brought a couple of little gifts for them, and I know Lula was very pleased with the Play-Doh we gave Caroline (every mom loves Play-doh, right? all those little pieces of dough smushed into the chairs and rugs and clothes...sorry, Lula).


I had a great time making shells and pearls and faces with Caroline...





After Caroline went down for a nap, Michelle and I went outside with Libbey to blow bubbles and take a walk. Her southern accent is the most adorable thing I have ever heard. We had the best conversation...I don't even remember what we discussed; I was just enamored with her delightful drawl (Georgian/Virginian/southern belle). I wanted to bring her home with me!

Lula kept insisting that there wasn't much to do in her neck of the woods. I beg to differ. We had the BEST time admiring the beautiful mountain views, eating pumpkin crisp, taking pictures of pumpkin crisp, planning to blog about eating pumpkin crisp...


...making the (curvy, speedy, race-car-driving) drive to Kingsport for dinner and a fun night at Food City...
...having way too much fun at said Food City...



...modeling with cases of (inappropriate) beer...


...driving home after visiting the transvestites at Starbucks, jamming to Lula's Ipod tunes, drinking ourselves silly on Mike's Pomegranate Lemonade and Bud Light Lime...


...learning how to ROCK OUT on xbox Rock Band with Lula and Scott...

...surprising myself with my awesome talent on the drums...


...saying "that's what she said" about a hundred times, cracking up EVERY time...


...staying up until 2am again, im'ing with Lizzy and laughing hysterically at certain Youtube videos...
(okay, Lula, you win, I took that picture out...you are so silly, you're gorgeous, and yes, that is what she said)

...eating ourselves silly on more pumpkin crisp, Fritos with "crack dip" and Becky's apple cake...


...visiting, talking, singing, laughing some more, becoming even better friends than we were before.


Lula, thank you so much for being such a gracious (hilarious) hostess. Thanks for making sure I woke up in time today (thank Charlie for me, too). Thanks for sharing your home, your family, and most of all, your friendship with us. I can't wait to show you our part of the country someday soon!

Road Trip!

Today is the day! Michelle and I have been planning this road trip for the past few months. We have been practically chomping at the bit this past week, waiting for today to come. My bags are packed and I am ready!

Wait, I better make sure we have everything...

Map? Check.



Twilight soundtrack? Check. (We'll give it a try, Lula...I'll let you know what we think.)


Sister/best friend since I can remember/road trip partner extraordinnaire? Check.


Where are we going, you might ask? Well, there are several people in our circle who know, but don't ruin the surprise, guys! Michelle and I are planning on a special post on Monday...we'll let you know then.


Wish us luck. Michelle is a great driver, but if I'm the navigator, we may just end up on Tiffany or Heather's doorsteps...Wouldn't that be a shocker?!

A Good Evening

I wish I had a photo to go along with this post.

It's against the HIPAA act to take pictures of patients.

I had a great evening at work tonight. It made up for the crappy morning I had at home.

When I came on at 3pm, my only patient was "Jim", who was in our unit after having brain surgery to remove a tumor. Jim is an elderly man, and ever since surgery a week ago, he has been unresponsive. Little movement, no speech, no eye contact, nothing. CT scans showed immense swelling in his brain where the large tumor had been.

Tonight, Jim opened his eyes, looked right at me, and talked. We didn't have a brilliant discussion about the presidential election, or even about the beautiful fall weather outside his window. He said "yes", "no", and "sure". He followed my commands to squeeze my hand and wiggle his toes. He said "no" when I asked if he was in pain. He coughed when I told him to cough.

These seem like small things, but for some reason these small things made me want to shout for joy. Some patients touch your heart in a special way. I have never taken care of Jim before tonight, but I have been in charge and helped with his baths and passed by his room for the past week. This man is a husband, a father, a brother, a friend. And although he has a long road ahead of him, today was a good day. For him, and for me.

This is why I am still a working mother. Because I truly love my job (bodily functions and all). Because tomorrow, when I am at home all day with Gabe, I will be a better mom for the experience I had today as a nurse. Because sometimes, out of nowhere, hope smacks you in the face and makes you take notice. Because God, in His infinite wisdom, saw fit to convince an 18 year old girl to apply to nursing school, then take a job in an ICU at the unbelievably young age of 20. This past August marked my 14th year of nursing, and I love it more today than I did back then.

I appreciated it so much when you supported me this summer, with my horrible patient experience. I just thought you might like to hear a happy story, too.

I'm Ready

Dear Daddy,

I know you don't like me to get into your gym bag when you're at work. But you've got so much cool stuff in there that I love to play with. Raquets, balls, neat headbands, glasses. Really, I just couldn't resist. I tried to avoid mom's camera so there wouldn't be any proof, but she kept chasing me down until she got a few photos for her blog. Jeez.




So anyway, I'm ready. When you get home from work today, let's go to the Y and do this thing!
